Zucchini ‘Pasta’ with Prawns & ‘Creamy’ Avocado Basil Sauce

It’s true. Food preferences of all the different people in our home can add yet another complication to eating healthier.
Making two totally separate meals: one for you for your “diet” and one for your family is a common problem.
The reality of the “two separate meals” approach isn’t sustainable... it’s time consuming and well it sucks making two dinners!
Instead, the 2 things my most successful clients have learned and I do too is to:
1️⃣ Discover as many healthy meals as possible your family likes and keep those in regular rotation.
2️⃣ Have healthy meals with easy swap components so to feed your picky eaters is simple & zero-time added.
For example, this avocado zucchini pasta. It’s super healthy and yummy. But my kids won’t eat it ... so instead I put on a pot of plain pasta with butter & parmesan for them.

✔️ My husband likes this zucchini pasta dish so he eats healthier.
✔️ My kids see parents who eat green vegetables and role model eating healthy.

Zucchini ‘Pasta’ with Prawns & ‘Creamy’ Avocado Basil Sauce
SERVINGS: 2 | 30 Minutes
INGREDIENTS:
-3-4 small green zucchinis OR zucchini noodle package
-8 oz tiger prawns, cooked
-1 cup cherry tomatoes halved
For the avocado & basil sauce:
-1 cup fresh basil
-2 ripe avocados
-1 clove garlic mined OR ¼ tsp minced garlic in a jar
-Juice of ½ a lemon (use the other half of the lemon in your water tomorrow!)
-Salt & pepper
FOR PICKY EATERS: Cook regular pasta noodles for kids with canned tomato sauce or butter/parmesan
DIRECTIONS:
1. Start by making the zucchini 'pasta'. Slice off the two ends of each zucchini. Use a mandolin with the "julienne" attachment to make pasta like strips. OR if you do not have a mandolin, cut the zucchini into thin wide strips, lengthwise, then finely slice the strips, lengthwise again. You should have long, thin strips of zucchini that look like linguini.
2. Bring water to a boil in a saucepan. Blanch the zucchini for 30 seconds, then rinse under cold water. You only want to just soften the zucchini slightly. Set aside.
3. Cook your prawns, or defrost pre-cooked prawns. Set aside.
4. For the sauce, place the basil, avocado, garlic, lemon juice, and a pinch of salt and pepper in a food processor/blender. Blend until you have the consistency you like.
5. Once the sauce is done, toss it in the bowl with the zucchini, prawns, and cherry tomatoes. Season lightly with salt & pepper
