DIY Cilantro Lime & Chicken Loaded Bowl
Tim Hortons has new yummy looking loaded bowls that caught my eye. We were on-the-go last Friday evening for an evening hockey away game without dinner prepped, so I gave the Cilantro Lime & Chicken Loaded a try.
It was good!
As I ate my loaded bowl in the arena lobby, I made mental notes of the ingredients so that I could recreate it at home.
Recreating restaurant & take-out meals at home is one of my favourite ways to eat healthier and not feel deprived. This dish was a hit at my dinner table & loaded with healthy grains, veggies & protein!
While this is not a dish that can be made in a pinch while on-the-go, it is a yummy & healthier choice for a restaurant style meal.

DIY Cilantro Lime & Chicken Loaded Bowl
SERVINGS: 4 | 45 Minutes
INGREDIENTS:
3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt
½ teaspoon ground cumin
¼ cup chopped onion
2 cups chicken broth
½ cup tomato sauce
2-3 chicken breasts
1/2 cup Frozen corn thawed
1/2 cup black beans
Cilantro
1 cup Cucumber chopped
1 cup tomato chopped
1 cup lettuce torn
Ranch salad dressing
MAKES GREAT LEFT OVERS: Double the recipe for an easy to-go lunch or dinner the next day
DIRECTIONS:

2. Cook the chicken breast in either the oven or in a pressure cooker. Once cooked, cut the chicken into cubes.
3. After the rice is fully cooked, stir in the corn and black beans.
4. Arrange your loaded bowl by first scooping the rice mixture into the bowl, then adding the chicken and cucumber, tomato, and lettuce on top/side.
5. Add cilantro to your taste & drizzle with ranch salad dressing. Enjoy!
