Protein Packed Comfort Tuna, Cheese & Egg Melt
This dish packs in a lot of protein and still feels like a comfort food! Originally created by my mother-in-law, this simple dinner or lunch makes great leftovers.
My kids & husband also like to eat this inside of a warmed bun. For them, I put the cold mixture inside a cut-in-half bun, wrap the bun in tinfoil and put it in the oven to heat the mixture and bun together (bake at 350°F degrees for 15-20 minutes).
If you’re looking to lose weight or reduce your carbs, choose an English muffin instead of a bun or on a bed of iceberg lettuce.
Tuna, Cheese & Egg
SERVINGS: 6 | 20 Minutes
INGREDIENTS:
2 cans chunked light tuna water-packed
English muffins
6 hardboiled eggs, chopped
1 cup calorie-wise miracle whip
Cheddar or marble cheese (1 cup shredded)
Salt & pepper
MAKES GREAT LEFTOVERS: Eat the next day warm or cold!
DIRECTIONS:
Preheat the oven broiler.
In a large bowl mix together: tuna, chopped hardboiled eggs, cheese, miracle whip & salt & pepper to taste.
Spread the halved English muffins out on a baking sheet & toast (1 minute is usually enough).
Spread the toasted muffins with the mixture, and heat for 3-5 minutes (until the cheese has melted). Keep the extra mixture for leftovers tomorrow.
Serve tuna warm with a side salad and/or cut vegetables of choice.
